Hawaiian Wedding Cake with Whipped Cream Cheese Frosting


What You’ll Need for the Cake:

½ cup of brown sugar
1 cup of white sugar
1 teaspoon of Sodium Bicarbonate (baking soda)
2 cups of all-purpose flour
1 teaspoon of vanilla
1 (20 ounce) can of crushed pineapple with the juice
1 cup of finely chopped walnuts
¾ cup of flaked coconut
1 teaspoon of cinnamon
⅛ teaspoon of nutmeg
1 teaspoon of salt
2 eggs

What You’ll Need for the Frosting:

1 teaspoon of vanilla extract

1 ½ cups of heavy whipping cream

An 8-ounce package of cream cheese

⅛ teaspoon of salt

A cup of white sugar


Preheat your oven to 350° and put oil in either a rectangular pan with dimensions 9×13 or a round pan of 9”.

Blend the the dry ingredients together in a bowl and mix the smashed pineapple with its juice, eggs, and vanilla until they are all well joined.

Put the batter in your previously greased pan, then bake for up to 40 min.

Now we need to make the icing for the cake: beat the whipping cream in a smaller bowl until it is nice and feathery and put it aside.

Blend the sugar, salt, vanilla, and cream cheese in a big bowl until they become smooth and velvety.

Mix in the whipped cream and blend so that they combine.

When the cake has cooled, ice it and top with whatever you prefer – our choice was coconut
